What’s a tidbit?
A tidbit is a little piece of something BIG and that something is the big, big world of cheese. We know you’re kinda busy making your own “fabulous fromage,” so, every month, we scour the Web for you, picking out new items of interest and giving you the links. If we missed something, let us know at info@cheesemaking.com or in the comments below.

Hi. I just read your article about kosher cheeses. I an an Orthodox Jew. I live in Israel (I’m also American). I keep totally kosher. In fact Israel has some of the best and fresher dairy products and cheeses in the world.
I am writing to you because the article you linked to is full of misinformation bordering on anti Semitic slander.
We do not consume milk or eat cheese products made with milk that comes from non kosher animals according to the biblical rules in Leviticus 11. But this has absolutely NOTHING to do with the way kosher animals are killed for meat. Nada!!!
Obviously the person who wrote that article is not Jewish and is not at all familiar with Judaism or our dietary laws.
It is a fact however that God requires us to slaughter animals via a quick single cut to the neck with an extremely sharp special knife precisely because this is the least painful way for the animals and it causes immediate death. We must also care for all of our animals humanely. If the animals are not cared for humanely or fed properly we may also not eat them
God is a God of love, mercy and compassion. For humans as well as animals. He created all living creatures. Surely He knows what is best for the animals as well as us.
Shalom from Jerusalem.

Fox is foxing us! In the current Tidbit story from Fox about the award-winning feta cheese the headline and parts of the story make it sound like the cheese came first in a world competition. Elsewhere it says, and I quote, “This year we finished first in the US and third in the world for our feta,” – still a great accomplishment not to be minimized. Actually, the category was not “Feta” (although their cheese was) – it was Flavored Semi-soft Goat Cheese. Feta itself has its own category.

I should have known better and cross referenced that. Thanks for pointing it out!
