We first got to know Jayne in April when she was our “Interview #4 with a New Cheese Maker.” Well, she isn’t so “new” anymore. After mastering Mozzarella, Ricotta and Chevre, she went on to make Farmhouse Cheddar, Stirred Curd Cheddar and Japapeno Cheddar. She’s still waiting for the last two cheeses to age, but her Farmhouse Cheddar was a big success (according to her son, Alex.)

Oh thank you for this! I have been panicking because there is a bit of mold forming on my 1st try at Farmhouse Cheddar, it is 5 days old and I can't wait to wax it 🙂 Off to find vinegar and a cloth!
This is so neat reading this. I just bought my first kit to make Mozzarella/Ricotta and am eagerly awaiting my chance to create one of my favorite foods – CHEESE 🙂

Thanks for all the photos and commentary! It is really helpful when us novice cheesemakers want to move on to more advanced recipes to hear, firsthand, what others have experienced. So thank you for your time and effort in documenting your experience. Glad it turned out well, now it's my turn to try cheddar!
