Rikki Carroll’s Farmhouse cheddar was a great starter. After six months we tasted it(Feb 29,2021). It reminded me of the cheddar from the farms in Vermont I used to love as a kid(far from the commercially pasteurized stuff! I made mine with raw milk and it makes a difference! Next time I’ll let it age longer( yes, I like it raunchy).
