Keto is a low-carb, high fat diet where the goal is to be in ketosis (fat burning mode). Cheese fits the profile so, it’s the basis for a lot of the most delicious recipes. We love cheese, and we suspect you do, too, so, we find ourselves enjoying a lot of Keto dishes. Most of them, like this one are as good cold as they are fresh from the oven.

Quick and Easy Parmesan Zucchini Fries
From All Recipes
Ingredients:
cooking spray
2 eggs
3/4 cup grated Parmesan cheese (You can shred the cheese instead of grating it, but it won’t stick as well to the zucchini.)
1 tablespoon dried mixed herbs
1 1/2 teaspoons garlic powder
1 teaspoon paprika
1/2 teaspoon ground black pepper
2 pounds zucchinis
Directions:
Preheat the oven to 425F (220C). Line a baking sheet with aluminum foil and spray with cooking spray.
Peel the zucchini and cut it into 1/2″ strips.
Grate the cheese.
Whisk the eggs in a shallow bowl. Combine the Parmesan cheese, mixed herbs, garlic powder, paprika, and pepper in a separate shallow bowl; mix well.
Dip the zucchini fries into the beaten eggs, shake to remove the excess, and roll them in the Parmesan mixture until fully coated. Place on the prepared baking sheet.
Bake in the preheated oven for 15 minutes and turn over.
Bake another 15-20 minutes, or until golden and crispy.

Being allergic to eggs this Keto recipe is a no go. Sounds yummy any alternative without eggs you be good.
I couldn’t find much info, but this might help:
Acceptable Egg Substitutes
Milk and yogurt can be used to help breading stick to the food items you are trying to coat. Add enough milk or yogurt to a bowl and submerge the item before rolling it in the breading. You can thin out thick yogurts by adding a splash of milk. You can also use olive oil or melted butter to help breading stick, which have the added bonus of lending flavors to your food. To help heavier coatings stick, dip the food item in flour before submerging in the egg substitute.
You might try doing what I do when i prepare squash for cornmeal coating to fry.
With your cut squash in a bowl lightly salt them. Toss, let sit for 10-15 min tossing occasionally. The juice that comes out helps the meal stick. You can try it with a small batch.
You wouldn’t want to leave them in the bowl for an extended time. They will become soft and limp.
Delish! I grow TROMBONCINO squash. It has a long seedless neck and a bulb with seeds. The long neck is perfect for cutting fries (again, no seeds) as well as spiraling. Of course, it can be used any way one would use summer squash. Then you can leave it on the vine longer until the skin turns from pale green to tan and use it like winter squash. All the while incorporating wonderful cheeses in each dish. Just wanted to share.

Yum! I make a similar recipe, but you cut the zucchini a bit thicker, saute both sides in butter with garlic until browned, then top with a breadcrumb/parmesan mixture, pop it under the broiler, and broil until golden brown on top! Bonus: all the yummy, crunchy bits of cheese mixture that brown on the bottom of the pan!

Just want to add that this looks like a perfect tailgate food. Before all of the Saints games we have a tailgate party in Champion Square. If the game is elsewhere. the party continues throughout the game & watched on the Jumbo thon. (An enormous TV screen)
