Elizabeth Scheller from English, Indiana sent us this recipe for Brie Pie with either orange marmalade or apricot preserves. She is a 31 year old dental hygienist. She and her husband (Justin) have been married for 5 years and they have 3 cats. She told us,
“I grew up in a small town in southern Indiana called New Harmony. I went to college at the University of Southern Indiana.
My husband and I enjoy fishing and own a bass tracker. We like to camp and enjoy being outside. In the springtime I thoroughly enjoy morel hunting. We live out in the country just a few minutes from the beautiful Patoka Lake.
Since discovering the cheese making kits, I have successfully made 2 cheddars and a Monterey Jack and am aging a Parmesan that should be ready in July, 2017. I am a huge animal lover!”
Elizabeth’s Brie Pie
Ingredients:
8 oz of Brie cheese
4 oz of orange marmalade or apricot preserves
1 package of crescent rolls
Egg wash
Directions:
Preheat oven to 350F.
Roll crescent rolls onto greased cookie sheet.
In the center of the rolled out crescent rolls, place marmalade or marmalade and Brie cheese.
Fold the crescent rolls up over the cheese and preserves and use egg wash to seal the edges.
Cook in preheated oven for 15-20 minutes or until the crust is golden brown.

Oh my goodness! I am going to make this!!!! I had a taste test, at the store, of a wafer type cracker, brie and fig jam. I was smitten! I treat myself to this and a few glasses of wine (every once in a while with a movie…….stress is gone!) By the way I’ve tried sour cherry jam (since I’m in Wisconsin..it’s easy to find. Sometimes fig jam is not so easy to find.
